Cooking classes for Rosapepe Retreats guests are held at the family farm of Baronessa Cecilia Bellelli Baratta. Cecilia has been a featured guest on radio spots in NYC as well as recently selected as a top Italian Chef for the seasonal food issue of the National Italian American Foundation’s Ambassador Magazine.
In our cooking classes with Cecilia we learn the “art of old tastes”. We will cook typical food influenced by both Greek and Roman traditions. The recipes include hand made pasta to make ravioli and the ragù, or pizza baked in a brick oven, along with making a vegetable and a dessert. We then eat what we cook! Meal includes local fine wines and beverages.
Cecillia uses all fresh ingredients grown from her working farm where she has various vegetables and fruits, olive trees for pressed oil, and of course, the mozzarella and ricotta from her own buffalo.
